Title: Excellent Tasting Salmon

2mdPotatoes, peeled and thinly
  Sliced
2tbMargarine
1/4tsSeasoned salt
1/4cPlain nonfat yougurt
1/2tsDillweed
1/2tsLemon pepper
1/2tsSmall tomato, diced
2smOr 1 large salmon fillet,
  Boned
1 Zucchini, thickly sliced

Preheat broiler as manufaturer directs. Arange potato slices in single layer at one end of rack in broiling pan. Melt margarine; stir in seasoned salt. With pastry brush, lightly brush mixture over potato slices. Place broiling pan in oven 5-7 inches from source of heat; broil potatoes 8 minutes. In a small bowl, combine yogurt, dillweed, lemon pepper, and diced tomato; set aside. Remove broiling pan from broiler; turn potato slices. Arrange salmon fillets on broiling pan with potato slices; brush salmon and potatoes with remaining margarine mixture. Broil salmon and potatoes 8 minutes longer or until potatoes are golden and fish flakes easily when tested with a fork. Meanwhile, saute' zucchini in a nonstick skillet coated with cooking spray. Sprinkle with seasoned salt. To serve, arrange salmon, potatoes, and zucchini on warm dinner plates. Serve yogurt sauce with salmon;garnish with fresh dill. From: Lpn4rn@aol.Com (Lpn4rn)
